Where It All Began

But First, Coffee was born from a simple belief: that great coffee isn't just a beverage — it's a ritual, a moment of intention in an otherwise busy day. We set out to source beans that tell a story, roast them with care, and share them with people who believe mornings (and afternoons, and evenings) deserve something better than ordinary.

Sourced with Purpose

One of the places we work directly with are smallholder farmers in Ethiopia's Sidama zone — one of the world's most celebrated coffee-growing regions, known for its bright, complex flavors and rich agricultural heritage. These farmers and others amongst the world have cultivated coffee for generations, and we're proud to partner with them in a way that's fair, transparent, and built for the long term.

Every bag of But First, Coffee starts with relationships — with the land, with the farmers, and with the communities that make exceptional coffee possible.

We roast in small batches because we believe quality can't be rushed. Each roast is dialed in to highlight the natural character of the bean — whether that's the floral brightness of a light roast or the deep, chocolatey warmth of a dark one. No shortcuts. A Note from Our Founder

My name is Cathy, and coffee has been the one constant in every chapter of my life — from New York City boardrooms to quiet early mornings here in North Carolina.

I started But First, Coffee because I wanted to bring something real back into people's day — not just caffeine, but comfort, warmth, and a moment to breathe.

For years, I worked in high‑pressure corporate environments where the day didn't start until that first cup hit the desk. Coffee wasn't just a drink — it was a ritual, a reset, a small act of self‑care before the world demanded everything from you.

When life brought me south, I realized something:
I didn't want to leave that ritual behind.
I wanted to share it.

So I built a brand around the blends that carried me through long nights, early mornings, and big dreams. Smooth, bold, nostalgic, cozy — each roast has a personality, a story, and a purpose.

Today, But First, Coffee is more than a shop.
